Gazpacho

Gazpacho

  • 2 ripe tomatoes, peeled
  • 1 cucumber, peeled
  • ¼ green pepper, diced
  • ¼ onion, diced
  • 1 cup canned tomato juice
  • 1 Tbsp olive oil
  • 1½ Tbsp vinegar
  • dash of Tabasco
  • ¼ tsp pepper
  • ½ tsp salt
  • 1 garlic clove

Place all ingredients in blender container. Cover and blend on low speed for about 1 minute.
