Apple Hill Cake

Makes 1 cake

  • 2 cups sugar (or 1 cup brown & 1 cup white sugar)
  • ½ cup oil
  • 2 eggs
  • 4 cups diced apples
  • 2 cups flour
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 2 tsp baking soda
  • 2 cups walnuts

Combine sugar, oil, and eggs, then add the apples. Sift together the  flour, salt, cinnamon, nutmeg, and baking soda. Combine with apple mixture. Pour into a greased 9x13-inch pan and bake in a preheated 350-degree oven for one hour.

Blueberry Pie

  • ¾ cup white sugar
  • ¼ cup tapioca
  • ¼ tsp salt
  • ½ tsp ground cinnamon
  • 4 cups fresh blueberries
  • 1 recipe pastry for a 9-inch double crust pie
  • 1 Tbsp butter

Preheat oven to 425° F.

Mix sugar, tapioca, salt and cinnamon, and sprinkle over blueberries.

Line pie dish with one pie crust. Pour berry mixture into the crust, and dot with butter. Cut remaining pastry into ½ to ¾ inch-wide strips, and make lattice top. Crimp and flute edges.

Bake pie on lower shelf of oven for about 50 minutes, or until crust is golden brown.

Fruit Cocktail Cake

  • ¼ cup butter
  • ½ tsp salt
  • 2 cups sifted flour
  • 2 tsp soda
  • 2 eggs
  • 1 ½ cups sugar
  • 1 can fruit cocktail (with juice)
  • Frosting:
  • ½ cup butter
  • ¾ cup sugar
  • 1 ½ cups milk (or less)

Mix cake ingredients and pour in greased pan. Sprinkle with ½ cup light brown sugar and 1 cup nuts. Bake at 300°F for 35-40 minutes. Boil frosting ingredients 5 minutes and add 1 ½ cup coconut. Spread on cake.

Graham Cracker Roll

  • 20 graham crackers (mashed 3 ¾ cups)
  • 20 whole marshmallows, cut up (Do not use miniature marshmallows.)
  • 1 can plus ¼ cup sweetened condensed milk
  • 1 cup walnuts, chopped
  • 1 cup dates, chopped
  • 3-4 graham crackers, crushed and set aside

Mix all but the 3-4 graham crackers. Roll in the reserved crushed graham crackers, wrap in waxed paper, and freeze.

Peach Crumble

  • ½ cup flour
  • ½ cup rolled oats
  • ½ cup brown sugar
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • ½ tsp cinnamon
  • 1/8 tsp cloves
  • ½ cup butter
  • 4 cups peaches, sliced
  • 1 tsp lemon juice
  • 2 Tbsp water

Mix dry ingredients together. Stir in butter until mixture is crumbly. Put peaches in bottom of 8 inch square baking dish. Cover with lemon juice and water. Sprinkle crumb mixture over top and pat down. Bake at 350° F for 45 minutes.
